This is the perfect gluten-free, chocolate chip cookie that both children and adults alike, fall in love with. The almond flour base makes this cookie a high protein treat with a nutty depth and the almond pieces and oats add some texture. We can’t forget about the delicious, dark chocolate chips spread throughout these cookies - you could replace the chocolate with another nut or seed, but we highly recommend the choc! These are simple, quick, and easy to make and so SO good. Good luck eating just one!

The Ultimate Almond Chocolate Chip Cookie

Makes 24

Ingredients:

DRY

3 cups almond flour

¾ cup cane sugar

½ tsp baking soda

½ tsp salt

½ cup almond pieces

½ cup gluten-free rolled oats

¾ cup dark chocolate chips


WET

½ cup butter (or vegan butter)

¼ cup coconut oil

2 tsp vanilla

2 Tbsp ground chia

½ cup water

Instructions:

Preheat the oven to 350 degrees. In a small dish combine water with the ground chia to make your “chia egg” – mix well and let sit for 5 minutes. In a large mixing bowl, combine all wet ingredients. Whisk until well combined. Add sugar and mix and then add all remaining dry ingredients. Stir and incorporate well. Line 2 baking trays with silicone baking mats or parchment paper and spoon out 12 cookie dough clusters to each. Bake for 15 minutes or until golden. Allow set time for at least 10 minutes.
